Perfect Roasted Meat
Ingredients
- Any 2-6 lb hunk of beef, lamb, or pork
- Seasonings
Steps
- (Optional) Marinate meat overnight
- Preheat oven to 500F
- Season outside of roast with whatever dry rub or other seasonings you like
- Place in foil-lined pan that can withstand 500F, fat side up if there is one
- Set timer and cook for 5 minutes per pound.
- VERY IMPORTANT: Once timer goes off DO NOT OPEN OVEN DOOR. Simply turn oven off.
- Let roast rest inside the oven, usually 2-3.5 hours. See notes.
Notes
- For a 2 lb roast I leave it in 2 hours. For every pound above that I add 30 minutes, topping out at 4-4.5 hours.
- Cooking time for partial weights I add 1 minute per .2 pounds extra, rounding down. (2.5 lb roast would be 10 minutes + 2 minutes, where a 2.8 lb roast would be 10 minutes + 4)
