Perfect Roasted Meat

  1. (Optional) Marinate meat overnight
  2. Preheat oven to 500F
  3. Season outside of roast with whatever dry rub or other seasonings you like
  4. Place in foil-lined pan that can withstand 500F, fat side up if there is one
  5. Set timer and cook for 5 minutes per pound.
  6. VERY IMPORTANT: Once timer goes off DO NOT OPEN OVEN DOOR. Simply turn oven off.
  7. Let roast rest inside the oven, usually 2-3.5 hours. See notes.
